I'm slowly emerging into the idea of vegan and so forth. But how can I truly convert unless there's a great recipe for pizza? Do you have a good idea for pizza crust?

Ditto for cheeseburgers. I choose veggie burgers at the grocery store, but do you have a recipe I can make at home? I find the fat free cheese slices at the grocery satisfactory, but I don't really know what I'm eating.

Lemme see, Gen has a recipe for Flatbreads under the appetizer section. I'm thinking those would make pretty good individual-size pizza crusts (hey portion control!), and soy mozzarella is quite good, and should be at the local super-grocery. Now for cheeseburgers, I would recommend making a batch of lentils with onion, garlic, salt, pepper, and veggie broth. Let them cook until very tender, and almost all liquid is absorbed, being careful not to burn. Cool them and then mash slightly so some form a paste. Make burger sized patties. Press patties into panko crumbs for a little crunch, and brown on both sides in a little grapeseed oil. Dress with a slice of soy cheddar and serve on a toasty bun with your favorite garnishes. Hope this helps!
