
BBQ Vegan Chicken Skewers
People often ask me if they can use chicken in this recipe. Certainly, but please use organic, free-range chicken. Vegan chicken skewers make a quick and easy appetizer as well as a main course.

Ingredients:
1 (6 oz) package of vegan "chicken" cut into bite-size chunks Lightlife Vegan Options
2 yellow peppers, cut into 1x1 inch pieces
1 8 oz package cherry tomatoes
1 zucchini, sliced into rounds
1 onion cut, into 1x1 inch pieces
BBQ Sauce (use your favorite, or see the recipe below)
Metal or bamboo skewers
Preparation:
Get 4 skewers ready - If you are using bamboo skewers, soak them in water for about 10 minutes, so they don't catch fire on the grill.
Skewer all of your ingredients, rotating ingredients flavors. Brush with the BBQ sauce and place on a hot grill. If you are using veggie chicken, it's pre-cooked, so you only need watch the vegetables for doneness.
If you're using organic chicken breasts, it's a good idea to skewer them separately, so the tomatoes don't overcook while you wait for the chicken to be cooked through.
Homemade Barbecue Sauce:
Depending where you are in the world, some condiments are difficult to come by. This is a recipe for good old American barbeque sauce!
Ingredients:
1/4 cup tomato sauce
1 tablespoon Louisiana style hot sauce
1 tablespoon molasses
1/3 cup organic brown sugar
1 tablespoon prepared mustard
1 1/2 cups cider vinegar
1/4 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon pepper
Preparation:
Combine all ingredients in a saucepan over medium heat. Simmer for about 10 minutes. Remove from the stove. Can be kept, refrigerated, for 2-3 days.
