Leeks area an elegant and flavorful side for a holiday dinner, and they are simple to prepare.
4-6 large leeks, cleaned and sliced into 1/2-inch medallions
2 tablespoons neutral flavored oil
Salt and Pepper to taste
Heat your oil in a non-stick skillet over medium-high heat. Add your leeks and sauté’ until tender. Salt and pepper to taste.
I like to serve leeks with my Vegetarian Wellington. I also like to use the drippings from the cooked leeks in my Yorkshire Pudding recipe.
