Cranberry Port Reduction


This recipe is an elegant alternative to traditional cranberry sauces. There is no sugar added other than the sugars in the Port Wine. This recipe can also be made any time of the year because it uses dried cranberries.



1 tablespoon non-hydrogenated margarine like Earth Balance for "baking"
2 tablespoons shallots, minced
  2 cups port wine
2 tablespoons vegetable broth
1 cup dried cranberries
1 teaspoon fresh rosemary

1 teaspoon fresh thyme
Salt and pepper to taste



Melt the margarine in a saucepan over high heat. Sauté the shallots until translucent. Add the fresh rosemary. Pour in the wine and flambé. When the flame dies down add the vegetable broth, dried cranberries, salt and pepper. Turn down the heat and simmer until reduced by about one third. I prefer to serve this sauce without straining it. Serve while warm.
