 Asparagus with Low-Fat Hollandaise

I love asparagus with Hollandaise, but the sauce is traditionally made with egg yolks and butter, so it's full of fat and cholesterol.  This healthier version can be made vegan or vegetarian and is a great substitute!
*Vegan hollandaise (use vegan sour cream and vegan mayonnaise)
*Vegetarian low-fat hollandaise (use low fat or fat free sour cream and mayonnaise)
Servings: 4
1 bunch of asparagus, rinsed, with tough stems snapped off

1/2 cup vegan mayonnaise (or low-fat mayonnaise)
1/2 cup vegan sour cream (or low-fat or fat free dairy sour cream)
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon paprika
1/8 teaspoon cayenne
1/4 teaspoon turmeric
1 teaspoon prepared yellow mustard

If you do not have a steamer, you can put two inches of water in a large pot and set a metal strainer in the pot (the strainer should sit above the water line). Cover with a lid that fits as tightly as possible.

Place your asparagus in a steamer basket or the strainer.  Heat over medium-high heat and steam asparagus until al dente - about 5-6 minutes.

Prepare Hollandaise: Place mayonnaise, sour cream, lemon juice, paprika, cayenne turmeric and mustard into a mixing bowl or small food processor and blend until well combined.  This recipe can be served chilled, room temperature or gently warmed in a saucepan.
