If a family of four had tofu for dinner instead of hamburger just once a week, it would save over 1200 gallons of water! Imagine what would happen if your entire block, or city, did the same!
It's National Pancake Day! Vegan pancakes are so easy to make, just as delicious and less expensive than the box mixes. Here is one of my favorites.
1 Cup Organic Flour
1 Cup Soy or Almond Milk
1 TBS Vegetable Oil
1 1/2 TBS Baking Powder
1 TBS Organic Sweetener
1/4 tsp Salt
1/4 cup Blueberries (or diced fruit of your choice)
Vegetable Margarine for cooking.
Mix together dry ingredients. Mix in the oil and almond milk until the batter is free of lumps. Fold in the fruit.
Heat the vegetable margarine on a griddle. Spoon the batter on to the griddle. When the batter starts to bubble on top it is time to flip the pancake. Cook on the second side for about 2 minutes. Serve with maple syrup or agave nectar and cinnamon!
Makes 8 pancakes.
Gluten Free Option: Substitute Buckwheat Flour.
